For a classic espresso from a portafilter machine, medium to dark roasts are particularly popular. Due to the longer roasting process, intense notes of chocolate, nuts, and caramel emerge more strongly, while the perceived acidity is usually subdued.

How to properly adjust your portafilter for the perfect espresso: grind size, dosage, and extraction time

Even the best espresso bean only reaches its full potential with the right settings on your portafilter machine.

As a starting point, you can use a classic espresso ratio of approximately 1:2. For 18 g of ground coffee, this would mean around 36 g of espresso in the cup, for example.

A brew time of about 25 to 30 seconds offers a good starting point. Ultimately, however, taste is what matters most.

If your espresso runs much too fast and tastes thin or unpleasantly sour, adjust the grinder a little finer. If it runs very slowly and tastes dry or overly bitter, grind a little coarser.

For dark espresso roasts, it is also worth starting with a slightly lower brewing temperature. About 90 to 93 °C is often a good starting point.

From there, you can adjust the grind size, temperature, and brew ratio to your taste step by step. It is important to change only one parameter at a time if possible. This makes it easier to understand which setting actually improves the taste.

It is also best to grind your espresso beans fresh immediately before preparation. This ensures that as many volatile aromas as possible are preserved.
